I'm having problem with the new ESEE Izula micarta scales...

I can't seem to open them out of the package. I mean take them apart... I feel mentally incapable right now, but the screws won't seem to 'unscrew'.

you need to unscrew them from both sides of the screw at the same time. you need two bits.
