I'm torn--new knife or new sharpening system?

I'm torn on what I should do. After handling some Sebbies today, I have been bitten by the bug.

My parents typically will get me one nice gift for Christmas of my choosing. I was planning on going with the Edgepro Apex 4, but after feeling the amazingness of the Sebenza, I'm leaning toward getting one of those. What are y'all's takes on this predicament? Should I go for the Sebbie, or get something that benefits all my knives by going with the Apex?
 
Skills in sharpening trump any system purchased, and expensive knives carry their own burdens.
 
Since you probably already own some nice knives -the most important thing to do is learn to sharpen IMHO.

The tools and skills of sharpening will greatly increase the value of all the knives you already have. It may not seem like you are adding to your collection, but you are in a huge way.

+1 to not buying a "system" -I recommend DMT diamond stones.

I completely understand your predicament, it took me a while before I bought a sharpener, and now I wouldn't trade it for anything.

Apex. Getting your current knives even sharper is breathing new life into them, like having a handful of new knives rather than one new knife.
 
I already consider myself decent at putting on an edge with my Sharpmaker, but the apex just seems to take sharpening to the next level. It'd be a lot easier for me to come up with the money for the Apex than it would the Sebenza, which is why I'm leaning towards the knife. Either way, I'm sure I'll end up buying one or the other eventually despite what I get for Christmas, so maybe theres now use in me asking the question LOL.
 
I want you to have the sebbie, but you need the sharpener. For the sake of all of us, get the sharpener. It is a matter of wants and needs -you must use "the force."

If you ask for the EdgePro, you and your parents will have knives in the best condition possible. The EdgePro will be a gift they give you that you can give them, as well.

A Sebenza is just a knife, just a material object. Gifts should be more than that.
 
I am in need of a sharpening system myself. Which Edgepro system do you recommend? Pro or Apex? I was looking at the Apex but there are a few different packages. I have always bought knives but never took the time to learn to sharpen them, which I do not feel that I have gotten the enjoyment out of my knives.
 
go with the apex

i've had the same problem, endura 4 or sharpmaker, went with the endura and i regret for doing so, i have a small lansky turnbox but it's smaller than the sm

get the apex before the sebenza, use the apex, get good at it, then get a sebenza wich you can then put a great edge on :D

No question about it... Go for the EdgePro. There simply is nothing better. Having that will mean that every knife you or your parents have will be perfectly sharpened all the time, quickly and efficiently. It's something that you will never replace (although you might augment it.)

The Sebenza, on the other hand, is a great knife, but there are plenty of great knives out there. I'm sure that in the future you will own many of them, buy and sell a few, trade a few others. But all will be sharpened on the EdgePro. And sharpened perfectly.

I just bought an edgepro apex 2 weeks ago. After using it to reprofile and polish the edge on my beater SMF I believe it was a great investment.

In fact, I would say that I definitely would rather have the edgepro than any $200 knife. (I know Sebbie is not a $200 knife but I am just saying edgepro vs knife for the $$.)

Being able to use all my knives hard while knowing that I can fix any edge issues in minutes allows me to enjoy my collection more. Now all my knives can be used as only my beaters were before.

I think the edgepro upgrades your whole collection, and I would say get that before the sebbie. You know you will be able to enjoy the sebbie more once you have the ability to sharpen it perfectly!

And the Edge Pro isn't going to teach you how to sharpen anyway. It's just "a system"

If you really want to lean to sharpen, get a diamond stone, a couple of good ceramic stones and a cheap kitchen knife (like, from a yard sale) and practice, practice, practice. Heck, you don't even need stones. Sandpaper can work just as well.

There is nothing like the sense of capability and strength that being able to sharpen a knife gives you.

Men sharpen things.

I had a Sebenza, did not keep it long. Spent a good bit more on my sharpening system, Edge Pro Pro with all the trimmings... Still have the Edge Pro, just sharpened a guys knives yesterday.

Forgot to mention earlier that if I go with the Sebenza, it'd be a combo "Xmas-birthday" gift since my 21st falls a little after a month after Christmas.

I've pretty much decided to go with the Edgepro however. The Sebenza would be awesome, but the feeling would wear off. The Edgepro "keeps on giving."
 
Have parents get sebbie and you buy apex. You can still sharpen their stuff for them as a thank you for sebbie.
