strange question, but if I want to import some carbon steel blades from a humid area of America to the winter of Australia is there any chance of the blades getting rust on the way due to temperature change?? Ocd question I know!
Cheers.

It is a very small chance; most blades are lubricated for transport and have been shipped more than once.

I’ve been living in a humid area in the US for decades. The amount of time a blade spends in transit (even if it goes around the world) is usually nowhere near long enough for rust to get a serious foothold. I’d think that even if you got a light dusting of it, you could remedy the problem easily. Just a guess, but... I’d guess it’s more likely that your knife will get lost during shipment than it will get rusty during shipment.

As long as the package is reasonably sealed, it should be fine. The main concern would be it getting very cold during transit, then landing here in Oz where the humidity is way higher, but this time of year, and also in general, shouldn't be a problem. And again, the packaging should keep most of the moisture out. The shipper should also be putting some form or corrosion mitigation in play, either a coating, or corrosion inhibiting paper, something of that sort.

The problem of temperature / humidity variations is much more relevant to wood / bone / horn scales. Steel will be fine. Any pits of black or red oxydation can be easily buffed out and will have no influence on the longevity of your blade.
