just curious best way to improve factory edge fro spyderco/benchmade, its fairly sharp already, but I like to get even sharper and polished. should I start work on with 500, 1k, 2k, then strop with with 1u compound? I don't use these much, mainly for collection purpose.

If I get a new knife and its sharp out of the box but could be a little sharper I usually go straight to the strop. If i want a very polished shiny edge I free hand on ceramic then sapphire then strop on leather

Ceramic is super fine. A sapphire stone is super ultra fine. If I sharpen a knife with my lansky system starting with extra course diamond stone, course, medium, fine, ceramic, sapphire, this achieves an almost mirror polished edge. Then stropping on leather with .5 diamond paste gets it sshhhiiinnnnyyyyy.

The best way I have improved a factory edge was re-profiling the geometry-taking my minigrip to 15 degree per side angle and refining the edge really improved performance.

I have some shapton stone if I refine factory edge or polish it, should I start with 1k or 2k shapton GS then move to 4k or 8k? then strop

If you are not going to use the knife but want to keep it for collecting, with posible sale at a later date, you will loose value with sharpening. Other collectors want it like new with the box. Sharpening will drop the resale price. As you collect knives your tastes might change and you will want to sell off to purchase other knives.
I have put mirror edges on knives and found that they are not great for a EDC. My perfered edge is 320 to 800 grit. I found a toothy edge works better for me as a carry knife. With these edges I can easily shave arm hair. I have gone to 8000 grit followed with 0.5 and then 0.25 diamond spray.
Some Spyderco knives and others come sharp but have grind lines on the edge which I hate to see. For this reason I always sharpen knives I intend to use. Your progression should give you a polished edge.
