A flat grind, the blade sides are completely flat. A hollow grind the sides are concave.
A "V" edge, the blade edge grind is symmetrical on both sides and flat. A concave grind, the sides of the edge grind, rather than being concave, are somewhat rounded.
Someone else can probably explain it in more scientific terms, but that is how I see it.

Hollow ground, as in a Buck 110 auto. If you laid a straight edge perpendicular across the blade, it would not touch 100%.
Flat ground, as in a Spyderco Military. A straight edge would touch the blade from top to bottom.
