Downtown? There's a decent selection at the military surplus store around 2100 1st Avenue, and a small knife shop in the Pike Place Market near the original Starbucks.

If you have time to drive there's a place called Epicurean Edge that has a mess of customs, you'd need to google it for the address.

they don't have everything on their website in the showroom, since it's pretty small, but they have probably 100 nice customs plus a few productions, & lots of kitchen wares.
