In the Buff...?
What: Epoxy / Fiberglass resin / Casting Resin takes a good Polish?
What has been your experience?

In my experience none does. Super glue does. There may be some I just know all epoxy I have used does not.

Casting epoxy, available at most hobby stores. Generally sold as "clear casting acrylic." I buy mine at Hobby Lobby.
Most epoxys don't get hard enough to polish well.

I used to use a lot of clear polyester resin to make sculptures out of. Dry sanded to 400, wet sanded to 1500, buffed with Zam (green) to get a crystal clear polish. Super toxic - you can practically feel yourself getting cancer every time you smell it, even through organic vapor cartridges on a full face respirator.

Here's my take on it from doing pen turning. Polyester resin (Silmar 41 for example) will give the best polished finish followed by polyurethane resin (Alumilite). Epoxy resin will give the dullest finish.
