Indentity of survival show host

Hi guys,

I'm looking for the identity of a survival show host. I used to watch him on cable a long time ago. I tried googling and youtubing with no luck. He is Australian. His shows are filmed out of the Outback. He is a stocky fellow with a big belly and a beard. I recall him wearing khaki shorts and short sleeve shirts. He also carries a big bowie style knife.

If anybody knows whom I'm referring to and can let me know his name it'd be much appreciated, thanks.
