Hey there I am looking for more information on my latest knife. It is a hen and rooster congress, with the following markings:

Both Pens: rostfrei ( I know that means stainless, but what type of stainless?)
Main 1: Bertram cutlery on one side, solingen germany on the other
Main 2: same except addition of model number 124 DS

The fit and finish is pretty good, nice snap on all blades with half stops.

So can you tell me when it was made, etc? My searching is bringing up nothing useful so I turned to the experts!

Thanks!

The most I can say is that most traditional German cutlery with stainless blades contain European alloys with compositions similar to 420HC or 440A. In other words, Carbon content of ~0.5%

Thanks Frank!
Edit to add: I finally found more information, and it's a little disappointing. It is not currently produced, but was very recently. I was hoping I had an older knife:(

the 124 means small four blade congress, DS stands for deer stag
the 224 is the large Hen&Rooster congress.
