The Insingo with it's elegant shape isn't just a pretty knife. It's great for harvesting the garden, there is little danger in cutting something you don't want to cut(like myself) or another not yet ready fruit. It's also great for cutting twine when tieing tomatoes, etc.

I can definitely see why the Insingo blade would be excellent for gardening. I love mine for most all tasks. You also make a great point about the reduced risk of cutting yourself because of the blade shape. I believe that is why a lot of rescue knives use a sheepsfoot blade. Thanks for the pics!
