Anyone have any experience with this knife? I am looking for a food prep/utility/everyday knife to be on my person while in my restaurant. My heart was set on the Nyala but after reading that the scales are glue on instead of only being screwed on I'm skeptical of the sanitation of the knife after prolonged use day after day.
Anyway, is the Inyoni scale removable? Anything else you may be able to add?
 
I believe the scales are permanently fixed on the Inyoni as they are on all CR knives as far as I can tell. IMO the Inyoni isn't the best knife for you wants any way. The serations are always going to be a problem as well as perhaps the grind. I would probably take a PS if I had to have a CRK for your needs. While the PS may be a little bit thicker, heavier and shorter it has a higher grind. IMO it slices better and having no scales at all it would be very easy to keep clean. The smaller Sikayo is also an option worth considering I think but it is a fair bit longer than the Inyoni or PS.
 
Thanks Haze. The concern I have with the Professional Soldier is it's painted. If the finish was like the Nyala then I'd be set.
