Ironwood, 52100 steel...

~3/32" thick 52100 Steel
~4.5" Blade (110 mm from handle)
~9" long

Desert Ironwood Handle

Tapered Tang - Distal Taper

Single Bevel - Right Hand Ground

Hand Rubbed Finish - Polished Bevel

I start these with a full flat plungeless grind then later work in the bevel/microbevel. The geometry is excellent and it is easy to sharpen.

High hardness - around 62 RC. I do a lot with my 52100 heat treat process for the best of fine grain and high hardness/toughness. This makes for a knife that stays sharp and is easy to sharpen.

Hidden Pin Construction - there is a center pin you can see but I used hidden pin construction for strength and good looks. I used black micarta pins.

notes... This is the first knife in the new Connoisseur Kitchen lineup!

Sorry for the dark pics! It has been raining a ton here.

Let me know if the link doesn't work...

Official Warning - Real Sharp!

Oh man, that handle just pops. Nicely done, as always!

Thanks! I knew I liked Ironwood but after finishing this I might only use Ironwood! :D Just kidding but it is incredible! It's light compared to G10 but feels as solid as can be, ironwood sinks in water!

Agreed ^^^; great handle selection Daniel

Thanks! I was never a wood guy but Ironwood gets by on looks alone...yet is as solid as it gets! Great in the kitchen...

Please make a lefty with 154cm. Love that ironwood great job Daniel

Sounds good! I have some AEB-L coming in, I think it will even top 154CM as far as stainless steel goes. CPM154 is my second choice for stainless kitchen knives so eventually I will try it too.

That Ironwood turned out great Daniel. Wonder what it would look like if you were a "wood" guy" ? :D

Thanks!

I liked it so much I now have over two dozen sets of ironwood scales! lol

I'm keeping it simple with the wood, I'm mostly using ironwood and blackwood. They are both as solid and durable as it gets.

Daniel, to save the peace in our home, I am so glad you made this after the "Apple" Chef's Knife . . . ;)
(Sally T is still laughing at your card, & it is taped on the cabinet door above "her" knife block . . .
Ironwood has become my first choice of handles, just something about that grain pattern and color with a deep, tan leather sheath . . . .
Great looking knife, Sally T said she likes it as well . . . . even if it doesnt' have some "red" somewhere on it . . . :)
Be safe.
p.s.: Are you putting away some cash for the balloons, streamers, & cake yet ??? ??? ???

Double grinds will work. I've been in the market for a long time looking for a lefty or v-grind for my sister who's a chef and caterer, but she's a lefty so the choices have been sparse.

I remember us talking about one along the lines of a Santoku, you are going to like my Borracho Bocho! :D

I have a few coming up all in double plungeless grinds. I'll do some true lefty grinds too.
