Is 1000, 6000, 8000 Grit Enough?

Hey guys,
Im going to be getting Whet stones or "Water Stones" soon and I was wondering If Having a 1000, 6000, and 8000 grit stones good enough. do I need some lower or higher do you think? Any Comments appreciated and the stones are going to be Suehiro Whet Stones!
 
Where water stones are concerned, I find 1000-2000 to be plenty for a pocket knife or general purpose kitchen knife. Woodcarvers and guys who hone straight razors like to go into the 8000+ range on a regular basis. My shapton 1000 is one of the last stones I've bought, because I REALLY like the edge it leaves, hair popping sharp, treetopping after a strop, and tons of bite to it for easy to start cuts. 4000 grit still has a little tooth to it, and gets slightly finer, but IMO is well into the diminishing returns range on pocket cutlery, and is outperformed in most tasks by the 1k grit finish.
 
If you want to be able to remove enough steel to fix a chip or reprofile the edge in a reasonable amount of time, you will want a lower grit in your kit.
