is 1095 carbon ok?

1095 is a very good working knife steel, very tough, easy to sharpen, and holds an edge fairly well. It is not stainless, so it will rust if not protected.
The phosphate coating is used for preventing glare and to reduce rusting, but you still need to keep it oiled (especially the uncoated edge) to keep it rust free.
I use mineral oil form the pharmacy on knives used on food, since it is nontoxic (it also makes a good honing oil). Any good rust preventative will work though, provided that you clean the blade and oil it after each use. Don't store the knife for extended periods in the leather sheath, since there may be some tanning acid lurking inside the sheath that can cause rust.
 
I’ve only got one knife with that steel, but I’ve got no complaints. Its been through a lot (general camp/backpacking beater for several years) and it keeps right on a slicin’ and a dicin’.
 
Probably more knives have been made with 1095 than just about any other steel. That includes all the Kabars, pilot survival knives and most carbon steel factory pocketknives(Old Timer being one for sure). I believe the old Marbles knives were also 1095 too. Keep your blade wiped down and oiled and it will outlast you.
