Is 15n20 safe?

Hello I was wondering is 15n20 carbon steel safe for kitchen knives?
I know it has a high content of nickel. And that kind of bothers me.
 
I would think so. Its stainless. Takes a great edge. Holds it for a while under light cutting task. The nickel in its composition is not harmful unless your getting metal shavings in your food, and in that case any metal in harmful. The nickel doesn’t leech out of the steel.
 
15N20 is a carbon steel that makes excellent kitchen knives when heat treated to higher hardnesses (above HRC 61).
