Is 200°f enough to disturb heat treat ?

Will Heating a Carbon steel blade sporadically up to 200°f can ruin the heat treat of the steel ???

Typically you have to hit about 350° F to have meaningful impact on heat treatment. But I wouldn't be surprised if a long enough duration at 200° F would potentially impact things. Tempering is a factor of both temperature and time. What's the context we're talking about here?

No, for normal edge tools - includes what you've in mind. There are exception/specialty ht for cold-use when 200F is above operating temperature spec/condition.

Didn't want to tldr so... I have a bunch of knives with a really tough Epoxy coating and when heated around 200 the coating comes off without even having to sand :D:D:D but still after this process those shaving sharp edges come out dull as butter knives so I was wondering if I was sk...... The heat treat of the blades.... Some of them need some time on a stone to get back .

Most likely softened epoxy coated the edge = wide smooth apex. Try clean edge with paint thinner or somesort of lacquer removal. Also hopefully 200 was done in well controlled and even or in boiling water.

I tough it was that in the beginning, I removed the coating with a razor blade and there was minimal leftover on the edge after cleaning, but still I have to sharpen and strop them back to pristine condition, strange never had that with other coatings...
