Both companies currently produce knives using both carbon and stainless steels.
All my Case carbon steel knives have patina from use. The same with my Bear & Son's.
Maybe you aren't trying hard enough. Eat a steak with one. Slice a few lemons. Spread some mustard on a sandwich. Stir up some homemade vinaigrette. Skewer a pickle.
Proof: Not the greatest picture I've ever taken but, three recent-ish Case knives - two with patina. The amber bone Stockman and yellow Delrin Trapper are both carbon steel. In the middle, the Case Backpocket is S35VN stainless - no patina, unfortunately. Kinda wish they'd gone K390 instead.
