Perfectly safe in blade form, no. Safe for most purposes, yes. Obviously for some people who are allergic to nickel or chrome, etc., just handling the blade could cause problems.
Based upon reading the MSDS, Section 5, it is possible in food prep that contact with acidic or basic foods could liberate some metal ions or oxides from the blade. Slicing tomato, lutefisk, or lemon with Stellite and eating it once in a while may not cause problems, and on the scale of hazardous stuff in modern life it's probably low on the scale. But I would not choose to do it everyday. Just IMO, YMMV, etc.
