Is the Case Canoe Damascus Stainless?

Simple question, Is the Case Canoe Damascus Stainless? I have been looking at this knife for a while, and I love the Canoe pattern, but I like to use my knives for food prep, so carbon damascus would get all rusted on me, I don't think it would look good with a patina, but I may be wrong, any experience with carbon damascus with food?

I believe the model number is SKU: 6098
 
Most damascus is non-stainless, and those I've seen that are stainless, have been specifically identified as such. If Case doesn't specifically identify the damascus as stainless, I'd bet it isn't.

Having said that, you may do fine using it for food prep. As with any carbon steel, the key is to make sure the blade is CLEAN & DRY after using it. Allowing a patina to form on the blade will also help protect it against rust. Beyond that, you could also use food-safe mineral oil to protect the blade, AFTER making sure it's clean & dry. Oiling the steel only helps if there's no moisture, acids & salts trapped under the oil.
 
I don't know what the damascus is made up of, but my damascus peanut has been in constant use since Jamie gifted it to me a few months ago. I've used the heck out of it, including on food stuff, and the staining of the damascus has been very minimal. I've just wiped it off after use. If anything, the dark part of the damascus has gotten a tad bit darker, while the bright part has been pretty much the same. I even had some mustard from a little plastic packet sit on the blade for a little while last week on a picnic, with no real staining taking place. If anything, the raindrop pattern has got a bit more dramatic. I don't know what Devin Thomas used, but it's great stuff!:thumbup:

In searching for a definitive answer to this question, I did find this description on a vendor site (not linked, per forum guidelines):

So, it appears the Devin Thomas variety isn't stainless. It's good to hear from Carl, that it seems to be holding up well. :thumbup:
 
On another vendor site, I found this description of a stag-handled Canoe (6098; pattern #52131 DAM) w/damascus blades:

As far as I know, Case has been using Rob (rather than Devin) Thomas damascus made from 1075 carbon steel and nickel, so it's non-stainless, but the etch used to bring out the pattern contrast makes it reasonably stain resistant. Devin does make stainless damascus that performs quite well, but I've never heard of any being used by Case.

I hope you're happy with it. I've been tempted to buy a damascus Case (raindrop, in particular) for some time, but haven't gotten around to it yet. Don't be shy about posting some pics, if you like it! :)

Just placed the order for the Case Damascus Canoe with Stag Handles, really excited for this one.
I'll post some pics and my impresions, when it comes, thanks for all the help, and please keep the comments coming on your experiences with Case Damascus

I use mine all the time for every little task. As everyone has said keep it clean and dry after use...no problems.
 
Just a little show and tell, my Damascus Canoe arrived a while ago, but I did not want to post up any pics yet because the shield was canted to one side, I sent it back to Case and they corrected the issue with no problems, really excellent customer service, would feel confident using them again, here is a pic of the knife, thanks so much for all your help

Heck, I didn't even know you could make a non-stainless damasus blade. I think you'll find the carbon blade is all you want or need. If you ever seen what I did with my carbon blades you wouldn't worry about getting food on one. That is one sweet looking knife you got and I love that pattern.
