Is there a proper name for this type of texture? The other common texture being herringbone maybe?

I would call that sculpted. Herringbone is like a fish skeleton.

I like this one because it has some resemblance of regularity in the pattern. Sometimes the sculpted handles can look really odd

I've made scalloped knife handles before, but never that aggressive, with so few scallops. The ones I made I thought were quite comfortable.
That one does look painful...

The width lets me keep the scalloping shallower vs a smaller diameter. I have a lot of customers that love these handles.

Not here, these are more shallow than typical as a result of using a larger wheel than most. I do some even larger and it works great. Its the little 1/2" dremel wheel that makes for a harsh texture.
