The deli where we go has started carrying Italian roast beef, which is roast beef that has been marinated in spices. I go through about a pound a week, which is probably not good, anyway here's how I fix it:
In a non stick skillet throw in a generous pat of butter or about 1 tablespoon. Turn up the skillet and start the butter melting. Slice a good bakery bun lengthwise and put in face down in the skillet getting the bun face all buttered up in the process.
Grill about two minutes or so it's on it's way to nicely browned. You may have to press it down to get good contact. Throw in a good handful of sweet onions and let them start to sizzle.
After another minute or so pull out the buns and top with sliced provolone.
The onions should be slightly browned but still good and crunchy. Throw in the roast beef you want on your sandwich. With tongs on spatula, swish the onion and roast beef around in the hot pan for about 5-10 seconds, not to cook the roast beef but to get it warmed up and start releasing the juices.
Spatula it all up and put in on the bun while sizzling.
Throw that down with a cold one and the world will be right! :thumbup:
