It will end up with cocobolo scales...sort of a companion piece to this monster...same finish on the blade as well.

Great looking knives. The don't look like they need to be babied either. What's the metal and geometry like? I'm going to try to learn a little more about the maker. Thanks.

From J's website:

These Chef's knives are made from wide industrial high carbon band-saw steel (15N20 or L-6 depending on the blade). The blade is 2" at their highest point (spine to edge) and just over .060" at the spine with a fine ground/sharpened edge. The blades are treated with my "antiqued" finish to
help prevent corrosion and the handles are set with stainless steel handle bolts.

Wow. That's a nice affordable line. Let us know how it handles. I'm starting to acquire a few kitchen knives and I'm quite interested in the American customs. I didn't see the gyuto listed. Was it a special order? Thanks.

It was....

J. is a great guy and is more than willing to work with you.

I thought I would update this thread with finished pics of the knife. These are J's pictures as the knife in the mail to me now. I'm excited to put it to work.
