Japanese damascus ?

i am trying to sharpen a 280mm japanese damascus steel knife...never seen this before but the edge keeps braking off..it was in very rough shape on the edge to begin with. while using 120 moldmaster stone on EP, i noticed that as i get close to the apex the edge just kinda folds over and on some spots and other it like it just seperates..i can even take small peices off with my fingernails..whats up?? i dont know if someoe used a belt on it and ruined the temper, is what i was thinking but have never had this with any steel before...it thought well will use higher grit but still happens..and my angle is about 20-21 degrees...then tried about 23 but no luck ...any thoughts?? jeff
 
Do you know the brand? Is it a kitchen knife? Folder? Hunting knife?
 
the brand is in japenese and its a kitchen knife like a chefs or gyuoto{spelling}.. the heel by handle is 2 1/8". and 280mm long..
 
one thing i just got to the apex and this started happening..maybe i just have to keep going as maybe its just the damage coming off?? can't hurt i guess if i do ...its no good this way... just never seen this before..i dont have a place for pics and wont let me post them from upload ..could email some if ..jeff
 
rc4u12, create an account on an online image hosting service, I personally use Imgur. Upload your images there, then you can open that image in a new tab. Take the url of that tab that only contains the image and enter that in the URL box under insert image.
 
Post a picture, there are thousands of japanese knife makers and a picture will help identify it.

What stones are you using and what finishing grit?
