I have been looking on the 'net for various places that sell Japanese kitchen knives. Most places that have them lack any meaningful descriptions and have extremely poor quality photos.

Specifically, I am looking for Masahiro, Suisin and, Tojiro brand western style kitchen knives in the ~$100USD or less price range. I have Murray Carter and Shinichi Watanabe blades and find them to be very good quality for their pricepoints. If you have experience with other production or quality handmade Japanese kitchen cutlery, please share what you know and any links to their factory or resell websites.

THANKS!

I have also looked at this site.

The knifemerchant site looks like a good one as well. What I am having a hard time with is looking at the picture and text descriptions and differentiating any tangible differences beyond the obvious.

Suisin
I am leaning towards these knives but, without seeing any of them in person, holding them, etc. it is hard to decide which ones are the best for my personal use. My initial inclination is to get the Suisin carbon steel knives.

I'm hoping someone else has been able to do a physical comparison even if they haven't actually used them. All of them appear to be good working knives so, maybe I'll just take the plunge and get some.

This is not the authentic Japanese style kitchen knife you're probably looking for but check this out. click here
Check out the comments by Sal Glesser of Spyderco. The item number is KX05 (Sashimi knife). I ordered one but have not yet had the chance to use it. It has a wooden handle with an uncommon ridge along the right side of the handle which is probably an alignment guide for the base of the fingers (for righties) or thumb (for lefties). It's very light and is obviously not for chopping.
