I come here for the first time to know how well Japanese knife is.
I have worked part-time as a commis for Japanese restaurant.
And there, I got interested in knives(Japanese knives).
According to the book I read, Japanese iron manufacturing industries are as good as those of other countries. But I don't it is true. So, I would like to ask everyone how well Japanese knives are.
Please tell me.

And if anyone recommend some knives for cooking Japanese dishes to me, I will be very happy.:)

Finally, this is my Japanese knife.

That is a pretty good looking kitchen knife, oh and I answered some of your questions in your first thread.

Japanese cutlery is considered to be some of the best in the world.

I believe Kai is a Japanese cutlery company. They own the American company, Kershaw. Both Kai and Kershaw make very good knives.

japanese knives are very good knives, equal to the better makers of the world. for the kitchen, Global Knives are widely used and relatively affordable (Anthony Bourdain swears by them). check them out.
goodluck.

We use Global in my household. They definitely get high marks from me. Sadly, my pop used one as a cleaver and dented one of my blade edges.

They're still razor sharp, however.
