Japanese Santoku for $13.99

Hey all,

Just picked up this santoku at Long's Drugs in Hawaii for $13.99:

It's very sharp out of the box, shaves hair easily and is stainless. I'll let you know in a few days how the edge holds up.

Needless to say, I am very impressed. So if you're in Hawaii, stop by your neighborhood Long's -you won't be disappointed.

(I also have a Hitachi blue steel forged santoku, but my wife leaves crap all over the blade everyday and its rusty -I'm happy this one's stainless, she can't mess this one up :D )
 
Okay, an update.

I've been using this knife in the kitchen and also as a utility knife for about a week now. It still shaves hair! From the edge retention (cutting cardboard, rope, etc.) I'm guessing that it's 440C. I did notice that it rusted slightly on the bead-blasted section when salty water was left on the blade overnight.

I finally got tired of waiting for the edge to become blunt, it held an edge better than some of my "mass production knives" in 440C, so I decided I'd see how strong the edge was by chopping a coconut in half with it. As you can see from the following pictures, the edge rolled and chipped -wasn't too surprising as coconut shells are really hard:

However, it was quickly fixed as I've reground it as a convex edge.

All in all, an excellent knife at an excellent price. Highly recommended.
 
That is a beautiful knife, especially for 13 bucks. I'd buy one in an instant if I could. Nice find!
