Japanese Water Stone?

I'm considering getting a Japanese Water Stone for sharpening my hunting, general purpose knives. I like the idea of a combo stone. Does anyone have any suggestions as to which grit stones to get? Also the paste for sharpening and a seller of the same? Thanks.
 
I've used 2 Norton combination waterstones with good results. Coarse grit is around 200-400, the other side is about 1000. My other stone is something crazy like 4000/8000. The xfine side will polish more than sharpen. This combination will put an unbelievable edge on a chisel or knife.

However, waterstones wear quickly and you need to be able to 'true' the flat surface. For daily use knives I tend to use an India stone or even a diamond plate. Good luck.

 
Yes. For hard duty knives, I would suggest a combo with a coarse and medium. Perhaps 200/800 or something like that. For knives on which you want a more refined edge then go with medium and finishing - something like 1000/6000.
 
The easiset way to put a hair shaving edge on a dull knife is a grinder modified to use cardboard wheels. I have mine set up so that I sharpen from the back of the grider so it turns away from me. I have 1 inch cardboard wheels with 600 grit silicon carbide glued onto one and I use white polishing compound on the other side. It takes probably about a minute to put a shaving edge onto most knives.
