I would have added this to anther thread I have going about my frustrations using the sharpmaker, but I decided to seperate them as this is regarding a different system altogether. This morning, my dad bough a JET Slow Speed Wet Sharpener. He said he bought it fo his new wood working shop, but that I could also use it. What do you guys think of this thing? It has a large fairly fine grinding wheel, and a leather honing wheel. He bought fixtures for large and small knives as well as a medium and fine honing compound for the leather wheel. It holds an angle from what I can see and seems to be a decent system. RPM is low (max 150) so accidental gouging doesn't seem likely if care is taken. Do any of you have any experience with this system? I am thinking about using it to sharpen my knives with both primary, and secondary bevels, then using the Sharpmaker to touch up my knives. What do you guys think of this? Yay or nay?

PS...is there a danger of grinding an unwanted radius on the edge with this system?

The Jet is similar to a Tormek, which many folks use. There is a learning curve to these machines. Practice on old kitchen knives and soon you will be able to put an edge better than many factory edges on your knives. As to an unwanted radius, the edge is so narrow that the "hollow" is not able to be observed. Here is the machne I use...

Awesome! I'm glad fellow knife lovers use these types of machines. It makes me feel that much more confident in using it.
