JK Anniversary Knife: Scourge of Cardboard and Vegetables

Hi all,

I have been putting my new JK Anniversary knife through the paces for the past week, and it is definitely living up to my expectations. Unfortunately, I haven't been able to enjoy any trail time since my last camping trip two weeks ago - so, rather than performing in its 'natural environment', my knife has seen lots of domestic action.

For the most part, I have been using it in the kitchen (the training camp for camp knives), where it makes short work of vegetables. It began to develop a patina right away, and really started to darken after a marathon weekend session prepping veggies for a large batch of pasta sauce. By Sunday, I decided to even things out with a light application of mustard. I really like the end result!

I moved last month, and have slowly been getting rid of cardboard boxes. Today, the City of Toronto employees went on strike, which means no garbage or recycling pickup for the next while. Since I don't want stacks of broken-down cardboard boxes kicking around, I thought it might be a good idea to cut them into itty-bitty pieces to save space. Now, the ideal knife for this task is a thin scandi or utility blade, but I decided to give it a go with the Anniversary knife, just for kicks.

After cutting up a dozen large boxes, the blade could still shave with minimal pressure. :thumbup: Talk about edge retention!

Here's a shot of the knife after a week of heavy use around the house. It's a real beast, and I couldn't be happier with it.

Nice patina! Looks like a working knife should look :thumbup: How do you like that canvas micarta? Grippy enough for you?
 
Absolutely. Nice and grippy, while still being comfortable. I prefer the Micarta to G-10.
