I have had the pleasure the last week or so of putting John's through their paces. I have to admit that I am more of a one knife type of guy when it comes to kitchen duty. I also always rseem to favor the smaller knives. So it goes without saying that I figured the paring knife was going to be my favorite, I was pleasantly wrong. The Camp Kitchen knife has won me over. It not only felt great in the hand but was also a great slicer.
I have sliced just about every vegetable/fruit I have had in the fridge, which is a whole lot. It took it all in stride and excelled at all of them.
I used the paring knife to prepare garlic tonight for a roast that I was making. It also worked great for puncturing my roast to stuff a dozen or so cloves of garlic.
One side benefit of the paring knife is the square spine of the blade. When I was unable to find a peeler for my carrots I just used the little paring knife. It worked out great.
Both of the handles felt great in the hand. I really liked the linen micarta handles.
I have really enjoyed using both of these knives and will hate to see them go. But someone else needs to contribute to the patina that these knives going to develop.
