I just received the new JK kitchen knife to try out and I must say that it works very well. It is a little thicker than I would have spec'd it but, after slicing up some veggies, I must rethink that. It slices and chops very nicely indeed.
So far I haven't done a whole lot of cutting but I sure hope to get a lot more done before passing it on.
The blade shape and handle work really well together. It keeps my knuckles from hitting the cutting board and allows ample room for rocking and slicing and chopping.
So far, the only thing I might change about it is that I would ask John to round the spine. I'm just not fond of square spines but that is just a personal preference of mine.




It sure made short work of these peppers.

I've been getting a lot of use out of this one. It's going to be tough sending it on. It really feels great and cuts even better.

I want to have the spine on my example rounded as well - it finishes off the JKs very nicely.

It's a fantastic knife. I'm really going to miss it when it's gone.
