I recently received my JK Hudson Bay Knife. It has a 7" blade, a torched oak handle held together by stainless steel pins. The knife came with a heavy duty leather sheath with copper rivets.
To say that I am delighted with this knife would be an understatement. While I knew that the HB would be a workhorse while camping (splitting wood, camp chores) - I had no idea that 'Hudson' would be such a lady in kitchen! For such a brutish (in a good way!) looking knife, I was shocked at how well it performed basic kitchen tasks at home. It is a formidable slicer - for veggies - but also surprisingly adept at slicing through meat. I would never have thought that such a thick blade (3/16" at the spine) would become my 'go to' knife for butterflying chicken breasts (for example). The knife has a lovely balance and feel and came with a perfectly sharp edge.
My field test for Hudson was a 2 day winter camping trip last weekend. It performed all the camp chores that one would expect of such a versatile and sturdy knife. It perfomed so well that I have decided to ditch my small hatchet from my kit and replace it with Hudson.
Lastly, I want to say what a pleasure it was to deal with John. First class service and a first class knife.
