To those of you Beckerheads that have not seen Ethan cook,I ask that you look up this family cookbook of Ethans family.
I have a copy [ LARGE and heavy ] with 4500 recipes and some of the best food you have ever prepared.
I was reminded of that when I made his family recipe of "Indian Pudding" this morning for my wife and I.
I first tasted it at PWYP when Ethan made it as a side dish for a large breakfast we had.
It is amazing,and I did the shortcut method he used on a open fire.
It made 4 large servings and we FINISHED the whole pot !.
Yes it was that tasty.
I served it with real maple syrup and OMG !.
The rest of the book has so many ideas and ways to gain weight,I am ascared.
Having eaten at his 'fire' a few times,I must say that I have not eaten any better at 5 star restaurants.
Joy of Cooking,look it up !.

btw,I too have an autographed copy and I love many of the recipes.

Once 'he' does it on an open wood fire,your spoiled !.

Last year he did a bean GARLIC dip was was KILLER and I do mean KILLER [ from both ends the next day ].

I still dream in garlic,and that is THE dish I remember.

Yep, got my GF that as part of her birthday in January. I'll hafta look that one up!
 
I think I'll have to pick up a copy finally for the GF. She just signed up to go to culinary school to become a Pastry Chef, but she's a cook in a high end restaurant right now. She's already a baking assassin on the side and can put ten pounds on your ass before you realize that's your seventeenth cupcake and half the turnovers are gone. Lol
 
Anyone that has been lucky enough to have Ethan's "Rockcastle chile" cooked on a campfire has been truly blessed. The recipe is in there and everyone should own that book.
 
That was the first cookbook I ever got, and one that belongs in every cooking household. I don't use it quite as often as I use allrecipes, but it has great recipes that are generally fairly easy. I hadn't realized that it's Ethan's family cookbook until recently, and was very pleasantly surprised by that bit of information.
 
Haha. This is hilarious. I have seen this book sitting in my moms kitchen for years and had NO idea it had any relation to a knife-maker, let along Mr. Becker. I may have to "borrow" it from her ;) Lookin' forward to checking it out, Ethan.
 
Just discovering it ?? Mine was published in the early '60s and I've used it ever since .A great basic cookbook !! I haven't seen any newer ones but apparently they've changed as the food interests of Americans has changed . There is a note in my copy about a new type of cooking that might be good in the future -- gas fired infra-red !! My present stove , of the 'commercial type ' has a gas fired infra-red broiler , about the best feature !! Times have changed.
 
I check out this forum every day, i didnt until recently relize this book was ethans family. Im a chef and have a ton of cook books but dont have this Joy of cooking even though its a classic. Ill defintly be picking up a copy soon.

I didn't even know about the book until recently. Probably because I don't know squat about cooking. Like at all. Is the latest edition the best one to nab or are the earlier ones better?

the VERY latest is VERY good. the one prior to that where the publisher uh "updated the format" without uh you know uh consultation? not so good. prior to THAT is good.

you can also score a repro on amazingcom of a very old version, with a "knight" fighting an iguanadon :) saint Becker*Mom :)
 
I've been looking at this book for a while. It's hard to justify buying a cookbook since there are so many recipes on the internet. I've thought about getting one for my dad (along with a BK5) since he used to be a chef.
 
I've meant to pick this one up since I found out it was Ethans. I just keep forgetting about it. Thanks for the reminder.
 
I have I believe one of the original printings at the parent's. It was my grandma's and then she gave it to my dad and he gave it to me.
 
I was looking at these the other day online..I like the ''vintage'' repro edition. may have to get it, although I dont really need a cookbook to make grilled cheese sandwiches and cold cereal (what I usually ''cook'') ;)
 
Love the food and blades connection :D Some of my business partners would get a kick out of it too. Can't wait for the new kitchen series to come out!
 
I bought one for my daughter to take when she moved; my wife missed it so much I ended up buying her one too.
