Just a quick question about knives and high humidity.

Since I live in Florida which is high in humidity, is it better to get a sandblasted finish on a knife? Thanks.
 
In short, no. Unless it will have a coating applied after sandblasting, it will leave a pourous finish which isn't good for corrosion protection. The finer the finish, the more rust resistant it will be. Coatings will help if you don't want a fine satin or mirror finish. What type of steel will this knife be? It might not make a difference, i.e. SAK steel should have a problem no matter what finish is applied.
 
The higher the polish, the less surface area is available for moisture to grab on to.

You can also use paste car wax to protect the steel of your knives.
