This is probably something that everybody but me knows, but what is the little circular cutout for?

They are called a Spanish notch-Blade catcher-Decoration......I think they look good on knives and I was asked to put one on the first knife of this style and everybody that has ordered one has not told me not to put one on it. your question has been asked alot and no one knows for sure what they were originaly put on blades for that I have read.the best reason that I have heard is that they where on the sailors knives to be used when pulling needles for sewing sails and repairing nets....Otherwise I dont know either maybe someone else knows.....Bruce

An old-timer told me years ago about the 'fancy stuff' on knives.

The filework on the top of the blade was for scaling fish.

The spanish notch was for stripping sinews from meat to make cord.

The cross design on some older knives [known as the "Sheperd's Cross"] was for worship in the fields at night. If the knife was opened and then stuck into the ground, the cross design served as a temporary place of worship.

There are probably a gazillion more explanations that also make sense.

I kinda liked this old fella and have just decided that he knew what he was talking about, at least for me.
