Building another KME kit and went with 60, 150, 400 and 800 grit "hydra" Veniv old formula diamond stones. Also picked up the Gritomatic universal stone holder. I used blue tape to level my first Venev stone set on Gritomatic's recommendation after trying to bend (slowly with multiple trys) a 2000 grit, which ended badly for that stone.
Gritomatic's close-out Spec's are no more then 6mm (0.236 inches) out of level (my old set was more then a business card off but less the a plastic card out of level. They mic'd by various estimating techniques at no more then ~0.50") from level. The bowing was observed to raise one end uniformly. Don't have any dishing or glazing yet to use SIC. Knives get sharp if your willing to fuss a little for not a lot of dosh.
I will say that guided clamp systems tend to make hobbyists more detail oriented then is necessary for getting working edges. As evidence, please reflect on your first decade of knife sharpening with a simple stone. Could the game, fish, meat or veggies tell a difference? Still fun though
