Just tried to break down a box with a Chicago Cutlery steak knife

What a piece of garbage that thing was for the job. I've been using a Bowie bushman to break down boxes and it draws and pushes very nicely. I just redid all the steak knives with my Sharpmaker within the last week so I figure it should probably be in pretty good shape... nope.

I will say that the steak knives have done a fair job on steaks and chicken breasts, so is there really anything to complain about? Maybe, maybe not. I guess I just like to use quality tools to get the job done.

Keep the touched up Chicago Cutlery knives for food, and use the Bushman for breaking down boxes... or replace the steak knives with Bushmen? What do you think?
 
Only replace the steak knives with Bushmen if you are willing to upgrade the size of steak you buy. Otherwise they will look like something off the value menu.
 
Steak knives don't even need to be sharp to do a great job. They only need to be thin. In fact if you knock the edge off your steak knives they will work great and not score up your wife's plates.


Chicago Cutlery knives aren't exactly known for their premium steels. I think I could put an edge on one that would fall through cardboard. Not sure for how long however.

I own a set of those Chicago Cutlery Steak knives. I have indeed put an edge on some of them that would split hairs...but it will NOT fall through cardboard. To be honest, I have never tried to cut cardboard with them, but I am confident that they would fall INTO the cardboard and become dull before exiting the other side.

They have a good geometry for cutting a well prepared steak, but there is not much "premium" about them. They are marginally better than what you will find in a decent restaurant.

Simple, just replace all your boxes with steaks
 
I have a CC steak knife with a black handle. It has been used and used again. You'd probably consider it worn off to a nub, but the thing works in many a capacity. I buffed the edge twice with a scotch-brite pad and have used the ceramic rod for subsequent 'clean-up' or adjusting of the edge. While an ok box cutter at three inches, why don't you get a fish fillet knife by Rapala for your box slicing needs? The older Rapala blades were marvelous slicers in the kitchen!
 
CC is hit and miss. I have some old CC steak knives that take and hold an edge pretty darn well...even when they are being used on ceramic plates.

I have other CCs that wont take an edge at all.

I think they just use random steel suppliers and heat treaters.
 
I like my steak knives to have small serrations. These knives have the larger scallops too, but they do ok for the "more expensive ones" from Target
