This knife has been in use for about a 7 months now with my mother and sister. They much due to the curved edge and much prefer the Grohman butchers knife. It is not as easy to chop vegetables and meats with the K1 on a cutting board. It is pretty obvious when I sharpen the knives which ones they prefer. The Grohman is always extremely dull due to frequent use then followed by the K1. Their comments are that it is not very good to use on a chopping board but good for slicing without any support. It looks like I should have gotten the K2.

The top edge needs to be rounded. My sister managed to cut herself a couple of times with the top edge. The cuts were not serious though. To correct the problem I used a file to round the top edge. This edge was indeed sharp enough to cut with moderate pressure.

The black coating has completely worn off where it rubs against food. This is about the middle of the edge and on the left side (handle in hand). The wear spot is about 2” long and ¼” above the bevel. Both my mom and sister are right handed and feed food left to right. Wear on the opposite side is nowhere as severe.
