I love my BK-16's. I've got a few and have two that I use all the time, A first production saber grind and a standard full flat grind. I skinned and processed a couple deer with my 16 last hunting season and it worked great. But I can't wait to use my gamestalker this year to do skinning. The gamestalker feels great in the hand for skinning, and might work better than the 16.
I think the Gamestalker is a better hunting knife for processing animals and I personally would not use it for any other tasks than that unless It was my only knife. The BK-16 is a better all around blade. I use it for bushcrafting, kitchen duties, skinning and processing animals, EDC, and have cut tons of wood with it. They are both great knives and if you can spend the extra money, get both. If you only get one, I'd say maybe the 16 because you will be able to use it year round for more than just hunting. Also, the micarta handle scales (for bk-16) really are worth the money and make the knife feel even better.
I would say the only down side to the stock 16 is the coating. It tended to get the silver skin and fat stuck to it. So I would recommend lightly sanding the coating till it is smooth, and it doesn't take much, or strip just the blade (not the handle part) with some paint stripper. Makes all the difference in the world.
