KAI Folding Steak Knife

So I'm wandering around Williams Sonoma the other day and I happen to spot this knife sitting in a display case along with some Shun kitchen knives:

You can't see it in the picture, but the KAI logo is stamped on the tang.

I didn't bother to take it out of the case and inspect it, but t appears to be a fairly decent, inexpensive, lockback folder.

Anybody have any idea what alloy KAI is using in this knife? Just curious . . .
 
Holy Mackerel! :eek: That sure looks like the same knife. Only difference is, the KAI logo is stamped on the tang now instead of "1993-2 VG-10 Japan". Do you think the current flavor of the KAI folding steak knife still features a VG-10 blade? If so, $30.00 is a crazy good price for that knife. Hell, even if it's 14C28, it's not a bad deal at $30.00.

Yes. That knife is manufactured under the "Shun" trademark and it's still available. According to the KAI website, the blade is constructed of VG-10. The KAI folding knife, on the other hand, is not listed anywhere on the KAI website or in the KAI brochure. All I know is that it's constructed of "Mirror Polished, High Carbon Stainless Steel" . . . whatever that means . . . and that it's manufactured exclusively for Williams Sonoma. It also costs about 1/3 as much as the Shun folding steak knife. That leads me to believe that the KAI Folding Steak Knife is NOT constructed of VG-10.

Ah I get ya now! I must have been day dreaming!

Would be nice to know what steel it is, I would probably buy one just because!
 
Under the "Summary" tab on that Williams Sonoma page, it says this one is made in China. I thought VG-10 was exclusive to blades manufactured in Japan. Maybe this is a new batch based on the 1993-2 design, but made in China? If so, I'd guess it uses 8Cr13MoV or one of its variants.
