Kajiwara Kurouchi Santoku 165mm

I just ordered this knife for my son Kajiwara Kurouchi Nakiri 165mm and this knife for my daughter Kajiwara Kurouchi Santoku 165mm from chief knives to go... I hope they are good quality.. I searched for lots of time and had a hundred budget each and this is what I cam up with.. I think the styles with suit them both.. but hope the steel and quality will be good..any experience with this brand?? not looking for what I should have gotten as its ordered but experience with brand and steel...thanks jeff

There is also a review of the knife on Chefknivestogo, where the user say it doesn't hold the edge very well.

However I have tried the steel and Im quite happy with it. Not my favorite, but neither of the cheap paper steels from japan is :)
I prefer 52100 in carbon and AEB-L in stainless.

Im sure your son and daughter will enjoy the knives. Its a nice gift. Just make sure to tell them how to handle carbon knives, as the need more tender, love and care than stainless knives .) Inform them about reactiveness and patina. And offer them to sharpen the knives as well (the review said they was not sharp out of the box). Im sure they will enjoy them :)
 
thanks for repley..i did read that reveiw but i read so many others with good veiws...and you really have to weed out the blatent good or bad of course...and they do know about carbons as they do visit once in a while....... and i will sharpen before i give to them...jeff

I've no experience with the brand, but I love Aogami #2 for non-slicing knives! It's perfect for nakiri. Great wear resistance and edge stability, not too hard to sharpen, patinas well. I wouldn't describe aogami as "cheap" but all things are subjective :cool:
 
Well i recieved the two knives today.And just a few thoughts on quality.. in this price range of $120 i was not expecting perfection of course but nice..On the nakiri the rounded tip is not as nice as on one twice the price but after a few sharpenings will come in nice. Although completly usable.No need to sharpen. The edge is sharp although seems just very slight waviness on sides when light hits right and looking from front to back or back to front on edge veiw...again complety within my expectations.cant feel it or see it in normal veiw from sides.The santoku has very nice edge veiw and tip seems very good. the edge has very nice slight rocking edge and in right place so it and seems perfect front to back..maybe sharpened by two different people..The handle on the nakiri you can just barely feel the wood to ferrell transition on none on santoku..handle shape is very good...the edges of spin and behind choil are not sharp but I will round slightly before i give to them. The balence in grip seems very good. I should use them for supper tonight to get a feel in hand in use.. So without yet using them or knowing how the blade will hold up i would buy again and again..after they use them and i sharpen them first time i will post thoughts again...jeff
 
I'm not familiar with Kajiwara specifically, but Blue #2 is a great steel for knives as long as it's heat treted properly (and my understanding is it isn't too terribly finnicky to work with). It costs about 3x as much as 52100 to buy stock steel in Blue #2, so I'd hardly call it cheap. I would be very happy to receive one of those as a gift.
 
i was packing up the nakari to send to my son and i dropped it...on the rounded tip at angle{ i moved my foot in time}..we have Duraceramic tile floor.. it took a good gouge out of floor but didnt break the thin edge tip...i thought for sure it would...i was lucky or the blade was done good. Duraceramic is pretty hard but no like real ceramic which would have had to fold or break the edge i think...jeff
