Schmalhaus. Nice review. I came across a composition break down of XT80, and the specs are a dead ringer for 440C not AUS8, for instance Carbon was 0.95-1.20. I have heard that XT80 was AUS 8 before, but have read other reports that reviewers found the performance was better than AUS8, and that has been my experience too. John

This information was provided to me by Keith Derkatz, the president of Katz Knives. They actually do use 440C but that's XT-75 (not XT-80).
