Ken Onion Santoku - VG10 or SG2?

hey vassili,

i think that is merely a mistake as from what i understand, the DM series is VG-10 cored and SUS 410 layered and the KSSG or elite series is the only series with SG2 cores, which btw i found one that is 6.5" and SG2 from knifecenter if you wanted to go that route.

I agree, I think in that case the SG-2 reference was a mistake.
However, I did see a Kaji version of the KO chef's knife at Williams Sonoma that had a SG-2 core.

Yea, there are 3 different variations of the KO Chef knife. The standard Shun Classic (Clad VG-10), Shun Elite (410/SG2), and Kaji Fusion (Nickel Stainless/SG2).

If there is a Kaji KO Chef's, maybe there is a Kaji KO Santoku?

I haven't been able to find the KO Santoku in any line other than Classic so far though.

The knife in the link is definitely a VG-10 core. The Kaji is the one with the SG-2 core. I bought a 10" chef knife from the Kaji line, and it has been outstanding!
