Right before Thanksgiving I did a little horse trading and came away with an 5/32 01 Kephart in Black ash burl with natural liners and white pin stripes. I had originally settled on trying one of the mid tech versions after reading the great reviews (any may still down the road) but when the opportunity came up to get one in trade, I jumped. The knife showed up right before we left town to visit family for Thanksgiving so I tossed it in thinking I could try it out prepping some stuff for dinner.
I snapped a few quick picture in the misty rain before we left. The burl on this handle deserves a photo shoot with my good camera (and probably some photography skills beyond my capabilities).

First order of business was to slice up some onions to put down in the roaster pan with the turkey drippings to later make gravy. While I know food prep isn't the Kephart's main function it quartered and sliced onions well for as thick as it is.

Turkey browned up nicely, after it rested I took it apart with the Kephart.


I'm happy with the model so far. Food prep isn't its main purpose but I wouldn't be disappointed in camp if that was all I had to use. I also used it this weekend to help butcher a doe my buddy go. It did a nice job removing the backstraps. I need to settle on some leather pants for it soon, once that happens I can see it getting a lot of belt time.
