Kershaw Echo to field dress whitetail?

I haven't used the Echo, but it looks like an ideal design for white tail. The plastic handle may look and feel a little cheap. The AUS-8 should be OK for an animal of this size. I would want a heavier duty alloy for an elk which might be 4 times as large as a white tail. A little bit more expensive, but a little nicer is the Pardue designed Benchmade 10500 Rant. The N690 blade will hold an edge longer than AUS-8 and it takes as good an edge. The clipped blade lets you get the tip into some places that would be difficult with a semi-skinner. It has a real solid feel. The high hollow grind really slices well.
