well Ill answer this post since nobody has 
Kiridashi's don't necessarily have to be chisel ground (one side only). That being said, yes the bevel on either side does effect the way it cuts.
Right side ground bevels suite a right handed person better and visa versa.
it has to do with what is being cut as well. A lot of factors play in....
Im assuming your planning on making a kiridashi?
