Alright - I've been drooling over this blade for a while and must know more about it. Can I get some specs, reviews, pics, etc?

How thick is the blade - how do you guys like it. Who uses it in the kitchen and how does it perform?

I have purchased four of the different kitchen Knives from Mike over the past year. All have been in the Build your own Shank Kit form. The Kitchen Combat was actually made out of ATS 34 and was called the "Combat Sushi" Knife. I used it in the kitchen and it performed excellent!I have a newer version of it called the Santouko. It is also ATS34. It is super thin... Just about 1//16" thick. My wife uses it daily and she just loves it! It has been in service in my kitchen for a couple months now and it still slices tomatoes so thin you can read the newspaper through it!:)

All in all I give them an A+ Highly recomended!

Wow - I never knew he had a santoku, that's a sweet blade. It almost looks like a cleaver though, is there any rise to the blade as it gets to the tip? I wonder how well it would do with rocking, chopping type motion. Any insight?

Thanks for sharing your pics - they are great.

This Santoku has no rise I can detect. However, i have used it for chopping and am able to get the rocking motion going:)
Snody also has the Gyotu design you may like. And also A carving knife I have seen pics of.

Lots of goodies for the Chef in your Household! No matter which one, or all, you get I think you will be happy! Good Luck! E

Here are a few more pics......while they pale in comparison to Eddies pictures....this will give an idea of size and other options.

Top to bottom they are:

Gyotu w/ blood diamond red handles...
Crisis carver.....
and finally Santuko.

I gave this set to my wife for Christmas and she has been very pleased with perfomance and how sharp these knives are (and she cooks EVERYDAY).

Like Eddie stated no matter what you go with you'll be pleased....and Mike and his crew have top notch customer service.....in fact, if you want you can call him directly.

Good luck, Mike Arnold

The Gyotu is saweeeeeeeeeeeeeeeeet.

Thanks for the pics fellas. I'll have to find a Gyotu somewhere now.
