they are all built to order. they don't pre-build and warehouse them like other models. always been this way.

thanks for heads up on it. I use set i got the wife often, far better than box store type kitchen cutlery.

I bought the 931 Chef's knife with the Rosewood Dymalux handle during last year's sale... it's stayed very sharp with occasional stropping, to where I exercise additional care/caution in using it.

I've already had the experience of slicing off the tip of my left hand index finger last year, with another knife by working too fast chopping up lettuce, and that knife was nowhere as sharp as the Buck.

I still get a case of the "hebbie-jebbies"due to it's sharpness and my memory of that experience, but I love this knife nonetheless and I'm glad that I finally bought one.

Waited until the last minute, as usual. Wondering if anyone would be able to offer me a comparison of the Buck kitchen cutlery to say maybe Cutco, JA Henckels, or Wusthof (go easy on me, please. I'm not saying those brands are all in the same class, just that those are the ones that I am familiar with.)

Thanks for any input! -tim

As a follow up...

I'm contemplating pulling the trigger on the 7-piece Rosewood set. I like the 13-piece, but really don't necessarily need the 6 steak knives, so figured I'd save some money.

If anyone has any input on finish between the Rosewood and the Slate or the 7-piece and 13-piece, feel free to advise me as well!! Thanks -tim

I have the paperstone set. looks worn fast but holds up well. dont have the wood set can't comment on those. got for the wife. wife loves it. geometry is decent, but a bit thicker than Henckels she has.

I ended up with a Paperstone set as well since it is dishwasher safe. Rosewood is supposed to be hand wash only. My wife supported my decision. :D
I don't like sharpening enough to put my knives in that abrasive blaster called a dishwasher..

O.P.

The Santoku chefs knife, 2020 Nov botm is a knife that Buck needs to add to the current lineup. I'd buy a 2nd.
That is the wife's favorite / most used knife in the house.
It seems that thing is always being used / dirty.
It holds an edge well..... she now knows how to cut the food and not the cutting board, so that helps.
It's a great size, and I really like the flat grind.

Someone awhile back inferred that Buck would be updating the kitchen cutlery, and the first thing I thought of was this knife.

Thank you all. I went for the 7-piece set in Rosewood late last night. The current set we have is dishwasher safe, but to be honest, I don't think we've ever actually put it through the washer. We always wash our kitchen knives by hand, so this shouldn't really change anything. I'm pretty excited for the purchase and can't wait to see them and try them all out!
