Having reached middle age I have now decided to take up cooking beyond the boiling water stage and am in the market for one good chef's knife as a starter. She Who Must Be Obeyed can with a set of midrange knives that still have some life in them that I have been using but I wish to have my own, one that wont be left in standing water in the sink over night or used to unjam the disposal.

Recommendations? Being an Al Mar fan their line certainly looks good, as do the Fallknivens.

I did run several searches but did not find much fresh information. I do mainly grillwork with beef and seafood. Frankly, the number of styles and patterns is a little bewildering.

Hello!

I think an Al Mar like this one would be awesome! Good price, good materials, great design. I hate knives with bolsters that run right to the edge. After some sharpenings the whole edge won't lay flat on a cutting board. With this design, you get robustness and a blade that will be functional for decades! Enjoy.

I agree that there is a huve variety of kitchen cutlery out there. Go with the Al Mar and worry no more. After you are cooking for some time you'll know more specifically what you want.
 
Something you may consider before spending $80.00 to $100.00 on a knife is once you get it you may find that it doesn't feel right after all.I'm not saying don't by the Al Mar what I'm saying is there are some great knives out there for $20.00 look at these knives as practice knives. Buy a few different $20.00 knives and see which one feels the best(handle shape & blade length) then start thinking about an investment knife. I have over 150 chef knives and 140 of them are no longer in use. The knives that I use most of the time in my restaurant are Forschner Victorinox.They are $20.00 knives and have become my favorite, but thats just me.Kitchen knives hold a passion as much as our EDC's so take your time!!!!

I hear ya, I have a case of holsters that served as experiments in what doesnt work for me. Actually, I have already sorta taken your advice. A while back I found a box of assorted Forschner/Victorinox knives on clearance at some backwoods general store and picked up a couple for next to nothing. Needless to say, since then everytime I find them I grab'em, my latest being a couple of paring knives being sold as bait knives in a tackle shop. How knives so inexpensive can work so well escapes me, but for shear value they have to be tops. I am thinking about getting some sheaths made so I can get these into the field.

Yep thats the knife!! I have about 5 different ones. The handle never slips out of the hand and the blade sharpens to razor sharp everytime.I've been using one of the 8 inchers for years and it never fails. They can be had for about $20.00 - $23.00
