I've been searching around without much luck looking for some good mid-range kitchen cutlery. I don't want the junky stuff like low-end Chinese stainless and don't want to spend the money on Murray Carter knives. I want something in the middle. Suggestions anyone?
 
Cutco makes some nice tempered 440a knives. Just be sure to ask the sales rep to give you the 20% discount. FYI: kabar knives are made at the cutco facility using the same heat treatment process.
 
Catch a sale at bed bath & beyond and you can get yourself a block of Henckels or Wustoff for around $200. To be honest though, there's nothing they teach in culinary school that can't be done with a 6 inch chef's knife and a 3.5-4 inch paring/utility. After that, you might need a larger chefs knife, maybe a boning or filet. I really only use the two basic blades, and personally, I like the Henckels a little bit more.
 
The polypropelene handles in cheap Wustoff knives are VERY brittle (I've seen them cracked in half). If you want mid-range cutlery be sure that it is full tang and solid construction.
 
I'm looking for $200-400. I don't use a lot of different knives (about 3) so I'd rather spend the money on 3 "must have" knives.

To be honest, I find myself using a few Old Hickory knives I bought. I love them. It took me a while to get them shaving sharp but geez. Now I have to hide them so my girlfriend doesn't use them. She would cut herself for sure.

How much? :)
